Recipe: Garlic Rice
2 tablespoons butter
3 garlic cloves, crushed
1 cup long-grain white rice
2 1/2 cups chicken broth, divided
1/2 teaspoon salt
1/2 teaspoon black pepper
I also used some fresh squeezed lemon, I added it about 15 minutes before it was finished
Preheat oven to 375*.
Heat butter in a skillet; add garlic and rice and cook until both are golden brown.
Add 1 cup of broth and the salt and pepper.
Bring to a boil and pour into a covered casserole; bake for 25 minutes.
Stir in remaining 1 1/2 cups broth; cook for another 45 minutes.
This can be doubled without increasing the cooking time.
1 small container of ricotta cheese
Preheat oven to 350 degrees. Brown the sausage, add sauce. In a 13x9 inch baking dish start with a very thin layer of marinara sauce (I found that this prevents sticking to the bottom of the pan). Add a layer of lasagne noodles (should be 3 across). On top of the noodles add a layer of sauce, then small chunks of ricotta evenly around the pan on top of the sauce, then a layer of cheese. Repeat until you have 3 layers (cheese should be on top). Cover and bake for 30 minutes. Serve with bread and salad. Enjoy!
