Recipe: Baked Salmon with Lemon-Dill Compound Butter
The salmon--
-preheat oven to 375
-place each piece of a salmon on a sheet of parchment paper that's large enough to wrap the whole piece of salmon.
-squeeze preferred amount of lemon juice onto salmon.
-sprinkle salmon with dried dill and add thin slices of lemon for garnish
- wrap the parchment paper around the salmon and fold so it's like a packet and bake for 20 minutes (more or less depending on salmon thickness) or until salmon is flaky and white
Compound butter--
-leave out a stick of butter until it is room temp and workable
-cream the butter and then add 2 tbsp dill and juice of 1/2 lemon, mix together.
-I usually spoon the butter onto a sheet of parchment, wrap it, and then form into into a stick-- throw it back in the fridge and it's ready to go by the time the salmon is done.
-the lemon-dill compound butter is also really wonderful on grilled asparagus, which is usually my side of choice with this dish along with long grain rice.
