Chicken Parmesan

First off, I make the tomato sauce early and let it simmer for a good part of the day. The sauce is easy. Just take one small green pepper, one large onion and two cloves of garlic and finely chop them all, cooking them in the same sauce pot for your sauce in a couple tablespoons of olive oil for a few minutes, until they're tender. Then add these ingredients:

2 large cans of whole tomatoes (crushing up the tomatoes as you mix)
2 small cans of tomato sauce
basil, oregano, salt and pepper (I think I add about a tablespoon of each, a little less for the salt)

The recipe says to let it simmer for a good 45-60 minutes.

While the sauce is cooking, I prepare and bread the chicken breasts. I usually use about 6 good pieces of chicken. Prepare a bowl of 2 eggs mixed and a bit of water and salt. Drench the breasts in the egg mixture and then bread them in a separate plate. I use packaged bread crumbs and add garlic powder, parsley, salt and pepper. Store the breaded chicken in the fridge until you're ready to fry and assemble.

Here's a trick I learned from the fabulous Giada DeLaurentiis on how to bread meat and get just ONE hand disgustingly coated with egg and bread: Use one hand for the egg dip and the other hand for the bread crumb coating. That way you're not dipping bread-crumby hands back into the egg mixture and vice versa. It really does keep things pretty neat!

When you're about an hour before serving time, it's time to start frying the chicken breasts. Heat up enough oil to cover the filets and fry one or two in the pan at a time for a few minutes, or until crispy brown.

Let them drain on a couple of paper towels. Now it's time to spoon a layer of the tomato sauce into a baking dish. You will layer the chicken breasts in the baking dish, drowning them in sauce.

I use one package of shredded mozzarella cheese and put two layers on top of the chicken. At the end, I sprinkle some parmesan cheese, basil and oregano on the top layer.

Into the oven it goes...bake it for 25 minutes at 350ยบ
