Recipe: Enchilada Casserole
1 lb. ground meat
1 pk. flour tortillas
2 cans cream of chicken soup
2 packages shredded cheese (chedder or Mexican blend)
2 cans enchilada sauce
2 cans refried beans
1)Brown ground meat, season to taste. Add soup and sauce, stir and simmer for 10 min.
2)Tear tortillas to make a solid layer on bottom of 9x13 baking pan (overlaping is okay). Spread 1 can cold beans on top of tortillas. Ladle on 1/2 of meat mixture top with cheese. Repeat these layers, top final layer with tortillas and cheese.
3)Cover with foil and bake 30-40 min at 350. Let cool for at least 15-20 min. Cut into large squares like lasagna and serve alone or with sour cream, salsa, lettuce and tomato.
This is even better the next day. It freezes really well too!
