Grape Truffles

Recipe: Grape Truffles


Grape Truffles:
1 large bunch/bag of red seedless grapes
2 packages of 1/3 fat cream cheese, softened
1 cup crumbled blue cheese, softened
2 Tbls. red wine
Chopped pistachios
salt and pepper

1. Wash grapes and sort out the nasty ones (large, firm grapes work best)
2. Mix cream cheese, blue cheese and wine in a large bowl.
3. Season with salt and pepper to taste. Let cool for an hour.
4. Using two small spoons cover each grape with the cheese mixture. (this part can be tricky, but once you get the hang out it it flies by)
5. Cover each "truffle" in nuts (I like to put the nuts in a bowl and kind of twirl the truffle around in it)
6. Serve immediately or chill until needed (no longer than 2-3 hours, the nuts won't be crunchy)
