Recipe: Healthy Shrimp Penne with Spicy Cream Sauce:
(well as close to healthy as you're going to get with pasta and cream sauce!)
From: MrsSpell
1/2 lb. peeled/deveined shrimp
1 pk. fat free cream cheese
1/2 pt. fat free half & half
Grated Parmasean cheese
8 oz. whole wheat penne pasta
garlic powder, italian seasoning, cajun seasoning (I use tony's chachere's but a pinch of cayanne/salt will work too)
Coat a pan with Pam and lightly saute shrimp in garlic powder and a little cajun seasoning. Set aside.
Melt package of cream cheese in a pot and slowly wisk in half & half. Season with garlic, cajun, and italian seasonings. Bring to a low boil and then reduce heat wisking constantly. (The longer the sauce sits the more it will thicken! If you like it thinner add more half & half, if it's not thick enough for you wisk in a few pinches of flour)
Boil pasta until al dente while sauce cooks
Throw pasta, sauce, and shrimp together and stir so that everything is coated in sauce. Top with a bit of grated parmasan if you like.
