Recipe: Crunchy Ranch Chicken
- Boneless, skinless chicken breasts (I usually use 1-1.5 lbs.)
- 1 packet of dry ranch dressing seasoning (I use Hidden Valley brand)
- 1/3 cup crushed cornflakes
- 1/4 cup grated parmesan cheese
Preheat oven to 350 degrees. Combine ranch dressing seasoning, crushed cornflakes, and parmesan cheese in a bowl. Spray each chicken breast (or sometimes I have them cut up into strips) with a little bit of nonstick cooking spray, then roll in the mixture of dry ingredients.
Once coated, place in a 13x9 baking dish (sprayed with nonstick cooking spray). Spoon any remaining dry ingredient mixture over the top of all of the chicken pieces. Bake 30-45 minutes (it really depends on the size of the chicken pieces... I always use a meat thermometer to test them to see when they're done).
I serve this with frozen roaster potatoes (McCain brand is really good) and fresh broccoli.
