Mexican Casserole

Recipe: Mexican Casserole


1 lb. ground beef & taco seasoning (or Spanish rice for a vegetarian dish)
4 large flour tortillas (or 6 small)
1 can of refried beans
1 bag of Mexican cheese
1 jar of salsa, any type of your choice
1 small can of sliced black olives (optional)
sour cream (optional)

Preheat oven to 350 degrees. On the stovetop, brown the ground beef and add taco seasoning (or prepare Spanish rice).

Pour salsa in a thin layer on the bottom of a regular sized cake pan or casserole dish. (This prevents the tortillas from sticking.) Arrange 1/2 of the tortillas in the dish as the bottom layer; it's okay if they overlap or extend up the sides. Using a spatula, spread 1/2 of the jar of refried beans on the tortillas as the next layer. Then add the beef or rice (sometimes I even use both). The next layer is 1/2 the bag of Mexican style cheese, followed by olives. Then the process is repeated: salsa, tortillas, beans, meat/ rice, cheese, and olives.

Bake for 20-25 minutes or until the dish is hot and bubbly and sides of tortillas are crisp. Serve with sour cream and tortilla chips, if desired.
