Italian Breaded Chicken

Recipe: Italian Breaded Chicken


8 skinless boneless chicken breasts (I like to substitute chicken about 12 chicken tenders)
2 cups Italian bread crumbs
2 tbsp minced garlic
1/4 cup parmesan cheese
1/4 cup parsley flakes
1 tsp salt
1 tsp pepper
1 lemon
about 4 eggs
about 1/2 cup olive oil

Mix Italian bread crumbs, minced garlic, parmesan cheese, parsley flakes, salt and pepper and squeeze a little fresh lemon juice in the breading mixture.

Defrost chicken breast, dip in eggs completely, coat with breading mixture. Do this for all the chicken first. Heat olive oil in a skillet on medium. Cook chicken in olive oil for about 4 5 minutes on each side or until done.

Note: Make sure chicken is completely defrosted and completely dry before coating with egg and mixture. Make sure olive oil is heated before cooking chicken.
