Recipe: Swiss Chicken for 2
2 Boneless Chicken Breasts (fresh or thawed)
Sliced Swiss Cheese (2-4 slices)
1 can Cream of Mushroom Soup
Milk
Seasoning for the Chicken (I use Adobo with pepper)
Rice or StoveTop stuffing
Directions:
Season and bake the chicken at 400 degees for about 20 mins. (depending on the thickness) I usually flip it about half way so it doesnt dry out.
Mix 1 can of Cream of Mushroom soup with about 1/4-1/2 can of milk: warm on stove or microwave.
Cook Rice or Stovetop per directions
After chicken is cooked cover with slices of swiss cheese.
Let it melt. *For extra goodness, put swiss on rice too! I love cheese!
Serve chicken on bed of rice or stovetop stuffing with the mushroom gravy on top.
Note: I usually make this with steamed baby carrots and some crescent rolls (the mini cans are perfect for 2!)
