Creamy Chicken and Rice

Recipe: Creamy Chicken and Rice

2 Chicken Breasts cut into chunks
2 tsp. olive oil (optional)
1 can low fat cream of something soup (I've found any of them works; I usually use cream of chicken, mushroom, or broccoli)
1 cup frozen broccoli
1 cup mushrooms cut into chunks
2 cups brown rice - prepared
1 clove garlic, minced
black pepper, salt - all to taste

In a sauce pan saute garlic in olive oil and add chicken-season to taste with salt and pepper. Remove chicken from the pan and add in can of cream soup, broccoli, and mushrooms. Cook on med heat until mixture begins to boil. Add chicken back in, reduce heat, cover and simmer for 5 more minutes. Viola! Dinner is ready!
