Raspberry Apple Shrimp Salad

Recipe: Raspberry Apple Shrimp Salad

For nights you don't want to bake, here is one of my favorite no-cook, toss-together salads. Fi is not a big fan of salads for dinner, but there are about three salads I make that he literally has like three portions of. This is one of them:

- Baby spinach
- Granny smith apples thinly sliced
- Glazed/glazed walnuts (homemade or purchased in store)
- Cold shrimp (small to medium sized)
- Crumbled goat cheese
- Raspberry dressing (you can make your own raspberry vinaigrette but I really like Ken's Steakhouse Raspberry Pomegranate Lite Dressing on this salad... mmm)

You can usually find candied walnuts in your produce section (or wherever your store carries bagged nuts and dried fruit). If you want to make them yourself, which is super easy to do, there are a million recipes. The easiest is to melt 1/4 c. white sugar in a pot and stir in 1/2 c. walnuts to coat, then separate and let cool on foil. If you want to make maple candied walnuts, brown sugar candied walnuts, etc, it is easy to find other recipes online.
