Recipe: Easy Chicken

Heat over to 350 F
Put in enough rice to cover the bottom of a 9x13 pan (I use a glass Pyrex one). Put in water even with the top of the rice.
Place skinless/boneless chicken breasts on top of rice (I am sure you can use other pieces, but I've never tried that so wouldn't know cooking times)
Cover the chicken with your favorite salsa. I also through in a few whole garlic cloves bc FI and I love garlic.
Back for 30-35 minutes (I always check my meat before serving...and I use a gas oven so it might be different for electric)
I serve with a tossed salad and some non-dairy sour cream on top of the chicken.
Note: for religious reasons, I don't eat dairy products and meat together. I am sure adding shredded cheese to the top in the last few minutes of baking would be yummy. As would using regular sour cream.
