Marinated Pork Tenderloin

Recipe: Delicious Pork Tenderloin

1 1/2-2 pounds pork tenderloin
Marinade: 1 1/2 cups olive oil
3/4 cup soy sauce
2 Tbsp dry mustard
1 Tbsp black pepper
1/3 cup fresh lemon juice
1/2 cup white wine vinegar
1 1/2 tsp minced fresh parsley
1 clove garlic, crushed

Combine marinade ingredients and pour over meat. Cover and refrigerate 24 hrs (I only did about 6 last time and it tasted the same as always.) Drain marinade from pork and reserve. Bake at 325 degrees for 45 min to 1 hour. Boil reserved marinade for about 5 minutes. Baste pork with reserved marinade.

This is one of our favorite recipes. I usually serve it with sweet potato casserole or baked sweet potatoes.
