Recipe: (Low-ish fat) Broccoli & Cheese Soup

2 cups chicken broth
2 1/2 cups fresh Broccoli, chopped
1 cup milk
2 Tbsp flour
1 cup shredded cheese (I use tex mex for added flavour)
Seasonings to taste
Bring chicken broth to a boil then add broccoli. Cook until softened.
In a separate bowl, slowly add milk to flour, then add to broth mixture.
Cook, stirring constantly, until soup thickens, then add cheese and stir until melted.
I use my typical skim/1% milk to make this, and it's just as good as the kinds with cream. I even like it better than Quizno's soup. Yummy.
