Recipe: New Zealand Sweet Potato Chowder

New Zealand Sweet Potato Chowder
2 tablespoons butter
1 large onion, chopped
1 tablespoon sugar
2 teaspoons dried thyme leaves
2 bay leaves
2 teaspoons salt
½ teaspoon black pepper
6 cups vegetable stock
7 sweet potatoes, peeled and cut into ~1in cubes
1 can corn, drained
1 cup heavy cream (I use 2% milk)
1 teaspoon minced garlic
1. Melt butter in a large stockpot over medium heat. Add the onion and sugar and caramelize for 10 minutes
2. Add the thyme, bay leaves, salt and pepper and stir to coat the onion
3. Add the stock, sweet potatoes and corn and bring mixture to a boil. Reduce heat, partially cover, and simmer for 20 minutes
4. Stir in heavy cream
5. Remove bay leaves and puree about half of the chowder in a blender or food processor until smooth
6. Return the puree to the pot and stir in garlic
7. Serve with warm bread
Makes 12 cups
