Recipe: Pumpkin Muffins
1 box spice cake mix
1 can of pumpkin (16 oz.)
1 egg white
1/4 cup water
Beat all ingredients together in a bowl with your mixer. Divide batter evenly into muffin tins (I think I usually get 24 muffins out of it, but you could make less and just get bigger muffins). Follow baking directions on the spice cake mix box.
SO easy and SO delicious, either for breakfast, a snack, or dessert! Oh, and for you WW people... if you do divide them to make 24 muffins... they are only 2 pts. each. Enjoy! :)
